This recipe is a perfect spring or summertime favorite, with a velvety yogurt dressing over crisp green beans. Served cold or at room temperature with the addition of fresh basil, this side can brighten up any weeknight supper.
3 TBSPolive oil
16 ozfresh green beans
1/2 cup fat-free plain yogurt
1 TBSPwhole-grain mustard
1 TSPfresh basil leaves
Heat 1 tablespoon of oil in a medium skillet, add green beans and sauté over medium-high heat until they begin to brown and blister, about 5 to 6 minutes. While the beans cook, whisk together yogurt, mustard, vinegar, and remaining olive oil in a medium bowl, season with salt and pepper to taste. Remove beans from heat, transfer to a serving dish or plate into individual portions, drizzle with sauce and garnish with torn basil.
