The flavors of orange zest and olives combine perfectly in this Greek-inspired side dish. It is a sure winner at any picnic, potluck, or holiday party and can be easily doubled to serve a crowd.
3/4 pound orzo pasta
2 TBSPolive oil
1/2 cup fresh parsley
1/4 cup chopped pitted green olives (optional)
Juice and zest of 1 orange
Bring a pot of salted water to a boil over high heat. Add orzo and cook until tender, about 8 minutes. In a large serving bowl combine olive oil, parsley, orange juice, olives, and olive oil. Stir to combine. Drain orzo in a colander and rinse with cool water for 20 seconds. Pour orzo on top of the parsley mixture and stir until orzo is evenly coated. To serve, season with salt and pepper to taste and garnish with orange zest.
