Sweet potatoes are one of the best holiday food traditions. Soft and satisfying, this versatile side is perfect at any holiday meal. To make it even more festive, add a teaspoon of ground cinnamon or a dash of ground cloves.
4 large sweet potatoes, peeled and diced
1 TBSPolive oil
2 TBSPcream cheese (optional)
2 scallions, thinly sliced
Bring 8 cups of water to a boil in a large pan. Carefully add sweet potatoes and cook over medium-high heat until tender, about 10 minutes. Drain into a colander, allow some steam to evaporate, and return to the pot. Mash using a wooden spoon or a potato masher; add olive oil and season with salt and pepper to taste. Transfer to a serving dish, add a dollop of cream cheese, and garnish with scallions.
