Bright orange carrots are good for you and great fun for the kids. This recipe can add a bit of color and flavor to any meal, which makes it perfect to have any night of the week!
10 medium carrots (approximately 2 pounds), peeled and cut into 1/2 inch rounds
1 tablespoon olive oil
1/4 cup fresh basil leaves
Preheat oven to 425°F. Place carrots in a bowl and toss with olive oil, salt, and pepper to taste. Transfer carrots to a baking sheet; place in an even layer and roast until golden brown and tender, about 15 minutes. Let carrots cool slightly; then tear basil leaves and place on top of carrots as a garnish.
