Italian Countryside Chicken Quinoa Kale Bowl

There’s nothing better for a hungry stomach than trying a new and delicious recipe. Quinoa topped with perfectly seasoned chicken and fresh kale and combined with the sweet taste of roasted garlic and creamy yogurt makes for a meal that both gratifies and satisfies.

4  chicken breastsprepared with Stouffer's Italian Countryside Seasoning Wraps per back-of-pack instructions, sliced

2 cups cooked quinoa, warmed

1  TBSPolive oil

1/2  red onion, sliced (about 1/2 cup)

4 cups trimmed fresh kale leaves

1 tablespoon apple cider or white vinegar

1/4 cup nonfat Greek or plain yogurt

2  TBSPfresh Italian parsley


Heat a medium skillet and coat with olive oil. Once the oil is heated, add onion and cook over medium-high heat, stirring occasionally, for 3 to 4 minutes, until golden. Stir in kale and cook covered for 1 to 2 minutes until the leaves wilt and soften. Season to taste with salt and pepper. Turn off the heat, pour in vinegar and keep warm. Divide quinoa into bowls, top with the cooked kale, and arrange sliced chicken on top. Top off the dish with a tablespoon of yogurt and a sprinkle of chopped parsley. Enjoy!
