Hearty Garlic Chicken Soup

This warm and hearty soup with chicken, tomatoes and chickpeas is the perfect answer to any cold winter night. It can be made with whatever you have on hand, so feel free to add fresh herbs to this satisfying recipe. You can even substitute pinto beans for the chickpeas!

4  chicken breasts prepared withStouffer's Roasted Garlic & Lemon Seasoning Wraps per back-of-pack instructions

1  14 oz can chickpeas, drained and rinsed

1  16 oz can diced fire-roasted tomatoes

6 cups water

6 cups fresh baby spinach or 10 oz frozen

1  TBSPolive oil, for dressing


Add chickpeas, tomatoes and water to a large pot. Cover and bring to a boil over high heat. Meanwhile, cut prepared chicken into bite-size pieces. Once the soup has come to a boil, add chicken and simmer for 5 a 6 minutes. Season with salt and pepper to taste, add spinach and cook until the spinach wilts, about 1 minute. Remove from heat, ladle into soup bowls and finish with a drizzle of olive oil.
