Autolyzed yeast extract results from the breakdown of yeast cells to release amino acids, salts and carbohydrates. It provides a “meaty” flavor to foods and is often mixed in with seasonings in snack foods, stocks and broths. Because autolyzed yeast extract contains free glutamic acid, those who are sensitive to monosodium glutamate or MSG  should look for the yeast extract on the label. Autolyzed yeast extract is considered by the USDA or FDA to be safe for this intended use.
