Rated 5 out of 5 by from Great awesome flavors to enjoy Bought some last week. Very happy that I did. Quick and easy like 123. Defrost pop it in the oven take out let it set for for a couple of minutes and you are ready for some Mexican eaten.

Rated 5 out of 5 by from Awesome tasting healthy food that is convenient In his book "The Body Fat Breakthrough" Dr Ellington Darden debunks many of the myths associated with dieting for weight-loss such as "low carb" and other "fad" type diets and proves through solid research that the proper mix of carbs fats and proteins is 50% carbs and 25 % protein and 25% fats. All the Fit Kitchen products lend themselves nicely to this proven fact and as an added bonus they taste good and are satisfying. I highly recommend this product and the book since I have lost over 50 pounds of body fat in under 90 days!!!!

Rated 5 out of 5 by from The 1-star reviewers are not too bright "TOO TOUGH!" the masses exclaim... More like too dense. The solution is simple: After stirring the rice 5 minutes in, PUT THE RICE ON TOP OF THE TORTILLA! Make sure to cover it completely. Flatten the enchilada with a fork first to make sure the filling is evenly distributed. You do NOT need to reduce the cooking time... Just use your brain! I have NEVER had a tough tortilla doing this. In fact this is my favorite frozen meal of all time. Other Mexican frozen meals usually use odd spices or sauces with questionable aftertastes and frozen meals in general have dubious ingredient quality, but not this dish. The salsa verde has a strong flavor that goes nicely with the enchilada filling. If I were to take off a fraction of a star it would be for the consistency of the rice portion size which seemed to vary quite a bit when the product first came out but seems to be more consistent as of late.

Rated 4 out of 5 by from Good Taste, No problems cutting it I found the meal to have a good taste. Unlike the other reviewers, only the very end of the tortilla was tough but the rest was easily cut with a plastic knife. Followed the instructions exactly.

Rated 1 out of 5 by from Terrible Enchilada covering is very hard and I couldn't cut it easily. I had to use a knife and that was almost not sufficient, because it is so hard. The content of the enchilada was skimpy. There was VERY LITTLE filling. I ended up eating less than half of this meal and then just threw the rest away, Then I ate some leftovers to fill in the void left by this poor product.

Rated 1 out of 5 by from Yuck! Okay, so the taste isn't actually that bad. However, the tortilla gets rock hard after microwaving. I couldn't even eat it. I had to just eat what was inside, which wasn't much. Would be better if it were just an enchilada bowl minus the tortilla.

Rated 1 out of 5 by from The worst...had to throw two of these in garbage I'm a HUGE Stouffer's customer & fan. Although at least $1 more expensive, none of the "Fit Kitchen" meals has been as tasty as regular meals. But this Enchilada Verde was absolutely terrible; followed microwave instructions carefully but the enchilada itself could only be cut with a steak knife, and the ingredients were terrible. I'll continue to purchase regular Stouffer's meals, having experimented with these un"fit" meals.
