Cheesy Macaroni-and-Ham Casserole

This recipe is so easy and yet gourmet. Serve as a "comfort food" main dish or as a perfect side dish.

Ingredients:

  • 1 package (40 oz.) STOUFFER'S Family Size Macaroni & Cheese,
  • 2 cups chopped cooked ham,
  • 1/2 large green bell pepper, diced
  • 1/2 large sweet onion, diced
  • 2 teaspoons vegetable oil,
  • 1 package (3 oz.) shredded Parmesan cheese,
  • 1 vegetable cooking spray,
  • 1/4 cup butter or margarine, melted
  • 1 tablespoon spicy brown mustard,
  • 1 1/2 to 2 cups soft breadcrumbs,
  • 1/2 teaspoon poppy seeds (optional),

Instructions:

THAW macaroni and cheese in microwave at MEDIUM (50% power) 10 to 15 minutes.

SAUTE ham, bell pepper, and onion in hot oil in a large skillet over medium-high heat 5 to 6 minutes or until onion is tender and ham is lightly browned.

STIR together macaroni and cheese, ham mixture, and Parmesan cheese; spoon into an 11-x 7-inch baking dish coated with cooking spray.

STIR together butter and mustard in a medium bowl. Add breadcrumbs and, if desired, poppy seeds; toss to coat. Sprinkle mixture over macaroni mixture.

BAKE casserole at 350°F for 30 minutes or until thoroughly heated.
